I am doing 80 Day Obsession again, which is a combined fitness & nutrition program. It requires timed eating of different food groups. This Southwest Scramble makes a GREAT pre-workout and/or post-workout meal on the program! It also is freaking delicious and a great healthy breakfast option even if you are not following a timed nutrition program. I love that, with minimal meal prep, this recipe is so easy to make, even if you’re getting up SUPER early to eat and workout before work, like me! It only takes ten minutes or less.

I love tarragon. I had it in a Blue Apron recipe one time and fell in love. I had a bunch of eggs to use from my egg CSA through Ley Creek Farm, so I figured I would meal prep a batch of fancy egg salad for my lunches. Instead of having it on a sandwich or wrap (which you totally could do), I had mine just over plain arugula, with some multigrain crackers for dipping. Egg salad is awesome and versatile - you can really do a lot with it!

This sheet pan chili lime salmon is a zesty dish ready for any time of year! And it's QUICK - most of the time is spent letting the fish & veggies marinate. I love the heat of the red chili pepper flakes, but you can totally tone that down, if you want. I bet this could be done in foil on the grill, too! I encourage you to look for wild caught salmon and use local veggies & honey when you make this - let me know how it goes!

I've been learning more about wheat and gluten and why we should avoid it (hint: lectins), but I'm a millennial and still need my avocado toast, so here is my best solution: avocado "toast" made with sweet potato. Honestly, I love the way the sweet potato slices crisp up in the toaster - it's like sweet potato fries! With avocado. Win.
