I love tarragon. I had it in a Blue Apron recipe one time and fell in love. I had a bunch of eggs to use from my egg CSA through Ley Creek Farm, so I figured I would meal prep a batch of fancy egg salad for my lunches. Instead of having it on a sandwich or wrap (which you totally could do), I had mine just over plain arugula, with some multigrain crackers for dipping. This might look like breaded chicken tenders, but don’t be fooled! It’s an awesome combo of spices that makes any protein delectable. In this recipe, I use it for a chicken tender meal prep meal, but I sometimes use it on pork tenderloin! My husband is not a fan of pork (or really chicken, for that matter) but when I use this combo of spices, or a similar variation, he is excited for dinner! Meal prep has really been a game changer for me when it comes to weight loss. I’m a teacher, so having lunch ready to grab and go really saves me time in the morning! I’m way less likely to eat unhealthy junk when I meal prep :)

My secret weapon for fat loss is, and always has been, meal prep. If I'm crunched for time or feeling lazy, my food is right there, ready to reheat for lunch or dinner. And then I have no excuse to stray from my meal plan! I have always loved Buffalo chicken (especially since so much of my family is from Buffalo, NY!). And I am so excited that this is an Instant Pot recipe - it cuts down on my weekend meal prep time like crazy! If you're looking to reduce your carbs even more, you could swap out cauliflower rice.
