I’ve been nomming this Greek salad all of holiday break because I’ve kept a bunch of the ingredients meal prepped in my fridge. It’s easy to just scoop out the combined toppings over some fresh spinach. Then I just microwave frozen chicken (#lazygirl), sprinkle on some feta cheese, and whisk together a quick lemon-oil vinaigrette. Super simple way for me to get a few veggies in for the day, when my Christmas diet has otherwise been entirely candy canes. Feel free to add other things you might have lying around your kitchen, like chick peas and red onion. Make sure to add them to your container count!

Strawberries come into season right at the beginning of summer here in upstate New York. I love using fresh-picked, local strawberries in my cooking. This salad has strawberries on top as well as in the dressing! Don't be afraid of having fruit with protein in a salad - it tastes amazing. Pro tip: make your own salad dressing. A friend showed me this salad last year and I originally thought it was gonna be SO WEIRD. Peach and pesto? Those didn't seem to go together to me. But I made it and OH MY GOODNESS, was it amazing. When Panera released their Green Goddess Cobb Salad with Chicken in 2016, I thought it was the most delicious thing in the world. Avocado, pickled onion, BACON... this salad really had it all. Plus it was FULL of protein! And I was obsessed with the dressing. I really wanted to recreate this at home. The summer after we moved in to our new house, my husband and I were having out-of-town family over to visit and see it - this would be the perfect opportunity to try. I made a big bowl of my own copycat Panera version for our family barbecue.
