My husband and I have had this dish probably five times this month already. It is THAT good. And easy!! Honestly, it doesn’t take much time at all. This healthy sweet treat checks all of the boxes for me. Honestly, I just love coconut milk and would eat it straight out of the can with a spoon. ( I sometimes do when I make chia pudding! :P) I also love the gummy texture of the chia seeds after they’ve set in the liquid overnight. It’s kind of like bubble tea! These blueberry muffins have been the perfect mid-morning pick-me-up this week, exactly when I’m craving a sweet treat. This recipe is based on FIXATE’s Blueberry Maple Muffins, but I tweaked it a little to make it gluten-free and also lower the intensity of the buttermilk. I upped the amount of maple a little, but to be honest, I can’t really taste it. But that’s ok. I’m just happy to be using a natural sweetener!
