We are lovingly calling it “Fallsome Sausage” in an homage to our old favorite pasta dish, “Awesome Pasta”. Bored with your breakfast routine? Switch things up with these over easy eggs & sweet potato hash! Okay, it’s not really a hash, but I couldn’t think of a simpler way to say “eggs and Brussels sprouts and sweet potato in a bowl”.

This recipe is inspired by the recipes in the book Beyond the Pill. This book is where I first learned of all of the amazing health benefits of Brussels sprouts (and other Cruciferous vegetables). But, it also fits in super perfectly as a pre-workout or post-workout meal with 80 Day Obsession, the timed workout & nutrition plan that I use to tone up and lean out.

Now, this might sound like a weird combo to you, especially if you’re not used to eating veggies with your brekkie, but hear me out - the combo of tangy apple cider vinegar on the sweet potato and sautéed shredded Brussels sprouts with an ooey, gooey, runny yolk is AMAZING. Trust me. I used to be the kid who never let her food touch. Look at me now… :P

This might look like breaded chicken tenders, but don’t be fooled! It’s an awesome combo of spices that makes any protein delectable. In this recipe, I use it for a chicken tender meal prep meal, but I sometimes use it on pork tenderloin! My husband is not a fan of pork (or really chicken, for that matter) but when I use this combo of spices, or a similar variation, he is excited for dinner! Meal prep has really been a game changer for me when it comes to weight loss. I’m a teacher, so having lunch ready to grab and go really saves me time in the morning! I’m way less likely to eat unhealthy junk when I meal prep :)
