Fall Sausage Bowl

My husband and I have had this dish probably five times this month already. It is THAT good. And easy!! Honestly, it doesn’t take much time at all. We are lovingly calling it “Fallsome Sausage” in an homage to our old favorite pasta dish, “Awesome Pasta”. We usually add a serving of brown rice to my husband’s bowl for extra carbohydrates, but I keep my simple following the recipe below. Happy Fall!

Prep Time: 5 minutes
Cook Time: 15 minutes
 Total Time: 10 minutes

1/2 lb ground mild Italian sausage (chicken sausage, if you prefer)
9 oz. frozen sweet potato cubes (I use this)
2 cups of chopped kale
1/2 cup of crumbled goat cheese, evenly divided
Salt & pepper


  1. Fill a medium-sized pot about a third of the way up with water and set it on the stove to boil.

  2. Cook your ground sausage in a pan on the stove over medium heat, breaking it up as it cooks. A Pampered Chef Mix N Chop is the perfect tool for this.

  3. While your sausage is cooking, microwave your sweet potato according to the package directions.

  4. When your water is boiled, add your chopped kale to the pot. Stir to cover the leaves. After just a few minutes, take the pot off the stove and drain the water.

  5. Combine the sausage, sweet potato, & kale and divide evenly among two bowls.

  6. Top each bowl with goat cheese and salt & pepper to taste.

Recipe makes approx. 2 servings
