Chicken Patty

Sometimes, you just want something comforting like a chicken patty. But often, the ones you buy at the store are so processed and laden with additional ingredients. They are super simple to make at home - you can make a huge batch of these and freeze them. You can eat them on a whole wheat bun, or a lettuce wrap, or even just plain! I really like these chicken patties for easy meal prep. Try subbing out almond flour for the all-purpose flour to make these keto!

Ingredients

18 oz. ground organic chicken
1 onion, finely chopped
1 tsp dried parsley
1 egg
1 tsp garlic powder
Sea salt & black pepper, to taste
2 tablespoons of avocado oil mayo
1
/4 cup all-purpose flour
3 tablespoons olive oil

Instructions

  1. Combine the ground chicken, minced onion, dried parsley, egg, garlic, sea salt, and pepper in a bowl & mix well. Add mayonnaise and stir to combine - the mixture will be soft.

  2. Place flour in a shallow bowl. Drop large spoonfuls of the chicken mixture into the flour. Roll to coat and press gently into patties.

  3. Heat oil in a skillet over medium-high heat. Cook chicken patties in the hot oil until golden brown and no longer pink in the center, 5 to 7 minutes per side.

Serve these patties however you’d like! You can put them on a whole wheat bun with any assortment of toppings or just eat them on their own, dipping them into mustard or mayo. These patties freeze really well, so you can make a bunch, freeze them, and microwave them as needed. It’s nice lazy girl meal prep!
