These marinated grilled veggies make THE BEST summer side. My husband and I like to make this to impress company. Follow the recipe exactly below or add your other favorite vegetables! As long as you give them some time to marinate, they will be bomb after grilling. You don't need to double the recipe if you're feeding a group - this makes a TON!
Prep Time: 30 minutes
Cook Time: 15 minutes
Total Time: 45 minutes
1 small zucchini, sliced into rounds
1 small yellow squash, sliced into rounds
1/2 yellow bell pepper, cut into chunky strips
1/2 red bell pepper, cut into chunky strips
1/2 red onion, cut into strips (not too small!)
8 oz. sliced white button mushrooms
1 cup cherry tomatoes, cut in half
1/2 cup extra virgin olive oil
1/2 cup soy sauce (or coconut aminos!)
1/2 cup lemon juice
1 garlic clove, minced
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
Place all cut up veggies in a gallon ziplock bag.
Whisk together olive oil, soy sauce, lemon juice, garlic, salt and pepper.
Pour over vegetables, seal bag. Refrigerate for at least 30 minutes.
Heat up your grill. Place vegetables on the grill in a large grill basket and cook for 15 to 20 minutes.
Makes 6 serving, about 1/2 cup per serving
