Avocado "Toast"

I've been learning more about wheat and gluten and why we should avoid it (hint: lectins), but I'm a millennial and still need my avocado toast, so here is my best solution: avocado "toast" made with sweet potato. Honestly, I love the way the sweet potato slices crisp up in the toaster - it's like sweet potato fries! With avocado. Win.

Cook Time: 7 minutes
 Total Time: 10 minutes


1 sweet potato
1 ripe avocado
Himalayan pink salt


  1. Slice your sweet potato into 1/4-inch thick slices.

  2. Pop those slices in a toaster. I usually do mine for about two minutes, check them, and then do another two minutes. The timing will depend on your toaster and preference, but keep an eye on them! They can burn kinda easily.

  3. While your slices are toasting, peel and mash your avocado (check out my AWESOME avocado slicing video here).

  4. When your "toast" in done, put your slices on a plate and top with avocado and freshly ground Himalayan pink salt! Enjoy warm.
