Italian Chicken

This is my adaptation of a recipe that basically combines bruschetta and chicken. If you have room for cheese in your meal plan, I highly recommend broiling some mozzarella cheese over the chicken! It is sooo good. This is a very quick and inexpensive meal to make. Great for company or on nights when you're just feeling fancy!

Total Time: 25 minutes



2 Roma tomatoes, chopped
4 Tbsp thinly sliced fresh basil
1 tsp garlic powder
1 tsp extra-virgin olive oil
2 tsp balsamic vinegar
2 tsp onion powder
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
2 5-oz raw chicken breast boneless, skinless
OPTIONAL: 1 cup of shredded mozzarella or sliced fresh mozzarella, divided



  1. Preheat oven to 350 degrees.

  2. Place the chicken in a baking dish and bake in the over for about 20 minutes.

  3. Combine tomato, basil, garlic, oil, vinegar, onion powder, salt (if desired), and pepper (if desired) in a medium bowl and mix. Set aside.

  4. Remove the chicken from the oven. Top chicken with tomato mixture.

Makes 2 servings.

OPTIONAL: Add shredded or sliced mozzarella on top of the chicken for the last few minutes of baking before removing the chicken from oven and adding the tomato mixture. My husband likes to eat it this way!
