Energy bites are really hard to photograph and look pretty, folks! But I’ve been really into energy bites lately, and with the holidays fast approaching, I just HAD to try my hand at a gingerbread version. Energy bites curb my sweet tooth craving and they contain much healthier ingredients than your traditional cookie. They also take me longer to eat, which allows me to slow down and savor them! You can make a bunch of these and keep them on hand in the fridge or freezer to grab quickly when you’re feeling hangry!
Prep Time: 5 minutes
Chill Time: 15 minutes
Total Time: 20 minutes
3/4 cup almond butter
1/3 cup Vanilla Shakeology (1 serving)
1/3 cup rolled oats
4 Tbsp molasses
2 Tbsp honey
1 tsp ginger
1/2 tsp cinnamon
1/4 tsp sea salt
Place all ingredients in a bowl and mix until it forms a dough.
Roll into 1” balls - two bites, or so! :)
Store in the fridge. Allow to chill before eating.
1 ball per serving. Recipe makes approximately 12 servings.
Portion Fix Containers: 1 yellow, 1.5 tsp. (even though you are using Shakeology, the single serving is spread out so much that it won’t count as a red)
