Seasoned Chicken Meal Prep

This might look like breaded chicken tenders, but don’t be fooled! It’s an awesome combo of spices that makes any protein delectable. In this recipe, I use it for a chicken tender meal prep meal, but I sometimes use it on pork tenderloin! My husband is not a fan of pork (or really chicken, for that matter) but when I use this combo of spices, or a similar variation, he is excited for dinner! Meal prep has really been a game changer for me when it comes to weight loss. I’m a teacher, so having lunch ready to grab and go really saves me time in the morning! I’m way less likely to eat unhealthy junk when I meal prep :)

Seasoned Chicken:
3 Tbsp. olive oil
1 Tbsp. sea salt
1 Tbsp. cumin
1 Tbsp. garlic powder
1/2 Tbsp. ground mustard
1/2 Tbsp. chili powder
1/2 Tbsp. freshly cracked black pepper
1/2 Tbsp. smoked paprika
1/2 Tbsp. onion powder
1 package of chicken tenderloins (approx. 18 tenders)

Sweet Potato Puree:
3 sweet potatoes
6 tsp. grass-fed butter
Cinnamon to taste

5 cups of frozen broccoli florets


  1. Make the seasoned chicken: Add your olive oil to a pan on the stove and heat on medium. Combine the sea salt, cumin, garlic powder, ground mustard, chili powder, black pepper, smoked paprika, and onion powder in a medium mixing bowl. Add the raw chicken tenderloins and toss to coat. Place the chicken in the hot pan and let each side cook for 4-6 minutes, flipping as needed. This will depend on the size of your chicken tenders!

  2. Prepare your sweet potato puree.: Microwave your sweet potatoes for about 7 minutes each. Cut them in half and allow them to cool. Scrape the soft sweet potato from the skin into a medium mixing bowl. Add your butter and cinnamon. Use an immersion blender for a smooth, creamy puree.

  3. Microwave your broccoli florets as per the instructions on the bag.

  4. Assemble your meal prep*: evenly divide all ingredients among 5 meal prep containers (like these). Spoon one cup of the sweet potato puree at one end of each container, place 3-4 chicken strips at the other end, then place 1 cup of broccoli florets in the middle.

*Your dish will reheat well after about 1 minute and 30 seconds in the microwave. You can really plate it however you want, but I find this is the most #Instaworthy ;)
